I work for a small family owned BBQ company with four stores in Georgia. Two of those stores have large brick pits, and one of those pits was in continuious use from 1929 until the early 70's (to the best of my knowlage). Never once used anything other than raw wood to smoke with. Sadly, we have now retired the brick pits and have converted to gas or electric smokers. We think that we got a better product from the old pits, but the price of wood and labor forced us to go with gas and electric. Just a little backround.
Ford wants to know why I'd vote against gas smokers. Because to me BBQ is about more than the end product. It's also about learning your pit. Controling the fire, knowing when to add wood, when to close down the dampers and why, and a lot of other things to. I've always said that BBQ is man against fire, fire against meat. So when I Q I only use raw wood. Thats just me. If you want to use gas, pellets, electic, charcol, or what ever it's ok with me. But in my mind you only get half the credit for the results.
